Tampa, Florida -- Want a special dinner, handmade? That's no problem. Servers in the dark, intimate dining room of The Melting Pot combine ingredients tableside to make the chain's signature cheese fondues.
Want it homemade? That's no problem, either. Because every recipe whipped up at every Melting Pot is dreamed up just down the road from your home.
The melted magic begins in the test kitchen inside the company's Carrollwood headquarters.
A themed menu of cheeses, meats, and chocolates is created from scratch every six months. To meet that schedule, the entire chain counts on one guy: Chef Shane Schaibly. No pressure.
"It's real humbling. It's a real humbling experience," said Schaibly, who estimates he's conjured up more than 70 recipes for cheeses, chocolates, and more in his four and a half years as the company's head chef.
"Sometimes you get caught up in the stress of day-to-day work, but you really have to take a step back and think there's at least 50 people every single night in 142 restaurants eating food that I created."
