MASON CITY — Two hours into her work in the bakery at Hy-Vee East on a Thursday morning, and cake designer Colleen Zander has a couple of cake orders complete with 15 more to go.
“I have a lot of work to do today,” she said.
In addition to the cake order, Zander also plans to decorate twice that many cakes for the bakery showcase.
Decorating cakes is both physically and mentally demanding.
“You have to be sharp,” Zander said.
As she describes her work, a customer walks by and inquires about a birthday cake for the next day. Zander promptly sets her pastry bag filled with icing aside and goes out to give her full attention to the customer as she looks at the display case.
When she finishes, Zander explains that if the right size undecorated cake had been available, she would have decorated it on the spot. Instead, it will be ready the next day.
Zander, who lives in Charles City, has worked at various Hy-Vee bakeries for the past 20 years. After a short stint at Hy-Vee East, she worked in Charles City and Waverly before coming back to Hy-Vee East three years ago.
